Ingredients:
- 2 lbs. Yukon Gold potatoes
- 2 cloves garlic, finely chopped
- 2/3 cup chicken broth
- 1/4 cup milk
- 1 Tbsp butter
- 10-12 caraway seeds
Method:
Peel potatoes and cut into 2 inch chunks. Add potatoes, chopped garlic, and caraway seeds to a large pot and cover with water. Bring to a boil. Reduce heat to low and simmer about 10 minutes or until potatoes are tender.
Remove from heat, drain potatoes and return them to pot. In a small saucepan add butter, milk, and chicken broth. On medium heat stir until gently warmed through. Add mixture to potatoes and mash. Garnish with green onion or parsley and serve.
Note: Warming the butter, milk, and broth before adding it to the potatoes helps keep the potatoes from losing their colour and turning a dull grey. The addition of caraway seed really enhances the subtle flavour of potatoes.
