Slow cooking in your favorite barbecue sauce makes for a flavorful, tender pulled pork sandwich that’s sure to please.
Ingredients:
- 1 boneless pork shoulder (2 lb./900 g)
- 3 onions, chopped
- 1/2 cup of your favorite Barbecue Sauce
- 8 kaiser buns, halved
- 1 pound (400 gram) package of coleslaw mix
- 1/4 cup mayonnaise
- 1 Tablespoon lemon juice
- 1 Tablespoon white vinegar
- 1/2 teaspoon sugar
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Method:
Place meat in slow cooker and top with chopped onions and barbecue sauce. Cover with lid. Cook on low for 8-10 hours or on high for 4-5 hours.
Remove meat and juices from slow cooker and place in a large bowl. Using a fork, shred meat into small pieces while discarding any excessive fat. Stir until evenly coated with sauce.
In another bowl combine coleslaw mix with mayonnaise, lemon juice, vinegar, sugar, salt, and black pepper. Spread coleslaw on bottom of buns and then top with the meat mixture. Serve immediately.
